Course themes

The course focuses on key themes such as food quality management, nutrition requirements, product development and consumer behaviour. 

We emphasise practical experience through hands-on projects and industry collaborations, developing essential skills for roles in food product development, quality assurance and technical management. This integration of core topics means you’ll be thoroughly prepared to meet the dynamic needs of the food and nutrition industry.

You’ll also learn how to evaluate information and make sound, evidence-based decisions and recommendations, helping you to develop into a well-rounded professional

Applied learning

Live projects 

A live consultancy project is embedded in the second semester of your course, where you’ll work with an external organisation, such as a food manufacturer or food retailer. 

Past students have worked with Co-op, Warburtons, Innocent and AG Barr. Projects have included reducing sugar in biscuits, confectionery and drinks, developing new plant-based product ranges, and sustainable food packaging and plastic reduction for a healthier planet and population.

Networking opportunities 

Industry professionals from a variety of disciplines present guest lectures and lead workshops, giving you a variety of subject knowledge. You’ll have the opportunity to meet employers at employment fairs, and our connections with the Institute of Food Science and Technology (IFST) provide opportunities at various events and committees.

Professional bodies like the IFST and the Association for Nutrition (AfN) also organise webinars and competitions you can get involved in. 

Competitions

We encourage our students to submit their work to Institute of Food Science and Technology competitions. In the past, our students have been recognised externally for the high standard of their work – and several of our students have won the prestigious Institute of Food Science and Technology Young Scientist award.

  • A specialist software for recipe analysis and dietary assessment

  • A digital portfolio software to record, organise and evaluate all the evidence from your course and relevant extra-curricular activities which support your professional development and reflective practice

Normally one from

• a HND or foundation degree in a relevant subject, with an overall merit profile from year two modules

• equivalent qualification in a relevant subject

Fees and funding

Home students

Our tuition fees for UK students starting full-time undergraduate study in 2025/26 are regulated by the UK government and are yet to be confirmed. For an indication, our tuition fee for UK students starting full-time undergraduate study in 2024/25 is £9,250 per year.

If you are studying an undergraduate course, postgraduate pre-registration course or postgraduate research course over more than one academic year then your tuition fees may increase in subsequent years in line with Government regulations or UK Research and Innovation (UKRI) published fees.
